Ingredients:
- Catfish filets
- Butter (for soaking)
- Mouton’s All-Purpose Seasoning
Important Note: Due to the large amount of smoke produced when cooking blackened catfish, always use an outdoor burner in a well-ventilated area.
Instructions:
- Prepare the Catfish: Generously coat the catfish filets in melted butter. Lay the filets flat on a pan and season liberally with Mouton’s All-Purpose Seasoning on both sides.
- Heat the Skillet: Using an outdoor butane burner, heat a cast-iron skillet until it reaches 486 degrees or higher. Do not add water or oil to the skillet.
- Cook the Catfish: Place the seasoned catfish filets into the hot skillet. Be prepared for a lot of smoke as the catfish cooks. Flip the filets once to ensure even cooking.
- Serve: Once the filets are fully cooked, remove from the skillet and serve immediately.
