Air Fryer Chicken Dinner

Ingredients:

  • 1 whole chicken (about 5 pounds)
  • 2-3 large potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon salt and pepper
  • 1½ cups hot water
  • 3 heaping tablespoons Mouton’s All Purpose Seasoning
  • ½ yellow onion
  • 5 cloves garlic

Instructions:

  1. Prepare Chicken and Potatoes: Clean and dry the whole chicken. Wash the potatoes and cut them in half.
  2. Preheat Air Fryer: Preheat your air fryer to 375°F.
  3. Season Potatoes: Toss the potatoes in olive oil, salt, and pepper, then line the bottom of your air fryer with the seasoned potatoes.
  4. Prepare Seasoning Injection: In a small bowl, combine the hot water and Mouton’s All Purpose Seasoning to create an injection mixture. Using a meat injector, inject this mixture into the chicken at various spots.
  5. Stuff Chicken: Stuff the inside of the chicken with the onion and garlic cloves.
  6. Season Chicken: Rub the outside of the chicken with any remaining seasoning paste. Add extra seasoning if desired.
  7. Air Fry the Chicken: Place the chicken breast side down on top of the potatoes in the air fryer. Cook for 50 minutes.
  8. Flip and Continue Cooking: Carefully flip the chicken breast side up and cook for an additional 50 minutes, or until the internal temperature reaches 165°F.
  9. Rest and Serve: Remove the chicken from the air fryer and let it rest for 10 minutes before serving. Enjoy!

Tips:

  • Use a meat thermometer to ensure the chicken is fully cooked.
  • Adjust seasoning to taste if more flavor is desired.
