Ingredients:
- 1 whole chicken (about 5 pounds)
- 2-3 large potatoes
- 2 tablespoons olive oil
- 1 tablespoon salt and pepper
- 1½ cups hot water
- 3 heaping tablespoons Mouton’s All Purpose Seasoning
- ½ yellow onion
- 5 cloves garlic
Instructions:
- Prepare Chicken and Potatoes: Clean and dry the whole chicken. Wash the potatoes and cut them in half.
- Preheat Air Fryer: Preheat your air fryer to 375°F.
- Season Potatoes: Toss the potatoes in olive oil, salt, and pepper, then line the bottom of your air fryer with the seasoned potatoes.
- Prepare Seasoning Injection: In a small bowl, combine the hot water and Mouton’s All Purpose Seasoning to create an injection mixture. Using a meat injector, inject this mixture into the chicken at various spots.
- Stuff Chicken: Stuff the inside of the chicken with the onion and garlic cloves.
- Season Chicken: Rub the outside of the chicken with any remaining seasoning paste. Add extra seasoning if desired.
- Air Fry the Chicken: Place the chicken breast side down on top of the potatoes in the air fryer. Cook for 50 minutes.
- Flip and Continue Cooking: Carefully flip the chicken breast side up and cook for an additional 50 minutes, or until the internal temperature reaches 165°F.
- Rest and Serve: Remove the chicken from the air fryer and let it rest for 10 minutes before serving. Enjoy!
